Having breakfast ready on busy mornings is a must especially this time of year for a  lot of moms who are trying to get their kids off to school. It’s so easy to skip breakfast or grab something unhealthy on the go. Instead save time, money & your health by planning a head!  Below are my favorite make ahead breakfast ideas with links to the recipes! Meal prep is not always fun but it definitely makes life easier and I highly recommend giving it a try

I make these and use all different veggies depending on what  I have in the fridge

This is another recipe that I mix up constantly. Pick your fav liquid of choice (  milk, almond milk, cashew milk, water ) and mix with oats. When ready to heat you can heat up or eat cold. Top with your favorite fruits, nut butters, chocolate, protein powders  ect!

I make these or regular pancakes and freeze them. I like to use kodiak cakes mix , the chocolate is my go to!

  • Egg Sandwiches

These are easy to make , I make mine with eggs, bacon & cheese on an english muffin. Once cooled I wrap in tin foil. I defrost then heat in microwave.

We like the recipe from above or I switch the ham for prosciutto

  • Chia seed pudding

Soak seeds overnight with your favorite nut milk . I like to add collagen to mine for some extra protein & nutrients , but the chia seeds alone are packed with protein. When I’m ready to eat I top with fresh fruit.

When scrolling pinterest I always click on a recipe that says quick , easy or kid friendly, any one else?! By the time dinner comes around I need life to be simple and these four kid friendly one pot dinners are a life saver. I have even made these house before during nap time and then re heated them for dinner and they still taste great.

For the fried rice dinner feel free to make your when fried rice, we LOVE the frozen one from trader joes and tend to use that instead of making my own. I also sometimes use a bag of mixed frozen veggies when in a pinch for the chicken sausage dinner. I think fresh or frozen veggies this meal still taste great.

Insta pot Bacon & Turkey Meatball Pasta 

Four Kid Friendly One Pot Dinners

  • bacon
  • frozen meatballs
  • tomatoes
  • sauce
  • pasta – we used a veggie pasta
  • fresh basil
  • parm cheese

Add your frozen meatballs to the insta pot. Next add your pasta, bacon , cherry tomatoes, sauce & basil.  Add 3-4 cups of water . Season with salt & pepper . Set insta pot for 10 min high pressure. When its done do a quick release . Add parm cheese , mix and enjoy!

Chicken fried rice 

  • chicken
  • Trader Joes fried rice & veggie mix
  • egg

Cook chicken in your favorite oil, we use olive or coconut. I tend to season with just salt & pepper but feel free to season your chicken however you like. Once chicken is cooked remove from pan and shred. Next add the frozen fried rice and an egg, mix well. Add your chicken back in and cook till rice is done.

Chicken Sausage & veggies 

  • chicken sausage
  • peppers
  • zucchini
  • sweet potato
  • tomato

Add everything to a pan , season with salt and pepper . Cook till chicken is done and veggies have s

Chicken noodle soup ( insta pot)

  • chicken
  • 4-6 cups chicken broth
  • carrots
  • celery
  • onion
  • noodles

Cook chicken in insta pot . Follow directions for your pot. I usually do about 10 minutes depending on chicken thickness. Once cooked shred or cub.

Next add everything else to the pot . Cover and set to seal. Pressure cook for 4 minutes and then use the quick release to vent . Mix and serve!

Protein bowls are one of my favorite things to make. I eat them for breakfast, lunch or post workout. This frozen protein bowl is definitely my go to recipe but I do switch up the fruits and add nut butters for time to time!

Frozen Protein Bowl

Ingredients : 

  • Frozen fruit.  for this bowl I used banana & raspberries
  •  1/2 a cup of nut milk of choice.  I like to use almond or cashew milk . You don’t want to use too much liquid or your bowl will be too watery
  • Protein powder. I use one scoop and usually use  chocolate but any flavor will work.
  • Optional* acia powder, coaco powder  ect

Toppings: 

  • dark chocolate chips
  • frozen raspberries
  • coconut
  • oats

Add all ingredients ( not the toppings ) to a blender . Blend until smooth. Don’t over blend or it will become too watery. If you need to, chill in the fridge a but to make the consistency thicker.

The best part about the snacks below is they are not loaded with sugar so you are not going to crash after eating them . There is nothing worse than eating unhealthy foods then feeling worse than ever about 20 minutes later! Maintaining a healthy life for me and my family is number one on my list and I know when I make better food choices I am a better mom and wife!

Bonus , these snacks are great for busy kids too!!

12 Healthy Energy Snacks For Tired Moms

  • Nuts. Almonds , walnuts, cashews, sunflower seeds. Remember to go for the unsalted ones.
  • Fresh , frozen or dried fruit
  • Avocado , plain or on toast
  • Hummus on pita bread
  • Yogurt – I like full fat and unflavored . Lookout for sugar content , most flavored yogurts are full of sugar.
  • Hard boiled eggs . Every week I make a bunch of eggs in my insta pot. This is an everyday go to snack in our house !
  • Peanut butter on rice cakes – add a banana for even more flavor
  • Energy balls

Cold brew coffee is huge right now, every coffee shop in town offers this “new” blend of coffee but you can make it at home with my cold brew recipe below .  If you love iced coffee then you have to try cold brew, it’s not watered down by ice and you don’t lose any flavor.  The best part about this home-brew is you don’t need fancy equipment to make an awesome cup of coffee.

Cold Brew Recipe

Things you need

  • one cup coffee
  • three cups water
  • jar with a lid
  • fine strainer
  • coffee filter

Add the coffee and water to a jar that has a cover. Mix so all the coffee is wet. Cover. Let steep for 12 hours on the counter ( room temp )

After 12 hours pour through a fine mesh strainer that is lined with a coffee filter. You may have to do this twice. Chill for a few hours.

This next part most people skip , DONT! You need to dilute with water  ( or milk of choice )  otherwise the concentrate will be too strong . I like to add water  and then flavor when ready to drink. Some people add equal parts of their flavoring ( milk, almond milk ect and skip the water )

Buffalo Chicken Zucchini Boats

These Buffalo Chicken Zucchini Boats have to be one of the easiest meals I have ever made!  They tasted great and I was able to save some for lunch the next day. They stayed fine overnight in the fridge.

Buffalo Chicken Zucchini Boats

 

Ingredients :

  • 4 zucchini
  • ground chicken
  • buffalo sauce
  • cheese
  • Optional: avocado & fresh tomato

Preheat oven to 350. While the over heats up cook your chicken , adding your buffalo sauce while the chicken cooks. If you want to make this a more traditional healthy buffalo chicken recipe you can add plain greek yogurt & cheese to your chicken mixture, I however did not.

While chicken is cooking prep your zucchini . Cutest hem length wise and then scrap out the seeds .

Spray pan with oil and add your boats ( zucchini ) top with the cooked chicken , cheese , tomato and more buffalo sauce if you want it extra hot. Bake uncovered for 10-15 minutes .

Top with avocado and enjoy!

When I was pregnant with Brody I had big plans to make some freezer meals for after but I never got around to it! Now that I have my insta pot meal prep is so EASY that I had no excuses this time around. Below are the meals & recipes  that I have made , most are pretty healthy and will serve me, my husband and Brody.

I have been making double batches of the meals below, one for us to eat now and one to freeze so I feel like I am a meal prep queen!

Before Baby Freezer Meals & Recipes 

I made this in my insta pot. I followed the directions for the meat balls but made some changes for the rest. I plan to reheat on the stove tope so I will be adding 2 cups chicken broth, zucchini, carrots and pasta  on the day we eat this!  Everything else got frozen.

There are tons of recipes out there for pie. Mine is my mother in laws recipe . I made the pie but did not bake it. I will bake from frozen the day we eat it.

these are mainly for Brody but will be great if we are in a pinch or to add to a meal/salad for lunch

I did a double batch of this because we love taco soup!! On the day we eat this  I will add avocado and some more cheese .

More pre baby tips :

I also frozen some plain shredded chicken , I plan to make buffalo chicken zucchini boats with it but it can be used for other recipes .

Everytime I make kodiak pancakes I make a double batch and freeze them for post baby. Just heat up from frozen in the microwave. These will be perfect for me or Brody for a quick breakfast.

These bowls are so tasty and thanks to Trader Joes ( and most stores ) , extra easy to make!! Sometimes life with Brody can be difficult , especially around dinner time!! Getting the pre cut, almost ready foods are not my fav but I do love almost anything from TJ and these things are simple and clean. So I bought some guac, already zoodled zucchini and some already pealed & cubed sweet potatoes to make life easier.

The sweet potatoes come all peeled and cut, all you have to do is cook them. I like to heat them in the microwave for about 2-3 min then add them to a skillet to make them crispy. The zucchini is these bowls are not cooked! How easy is that!! And since the guac comes already made all you have to do is mix it with the zoodles.

I like to top mine with hard-boiled eggs and tomatoes to make it a little more filling.

  •  cooked & cubed sweet potato
  • zoodles
  • guacamole
  • salt & pepper
  • Optional, eggs & tomatoes

Mix the zoodles, guacamole , slat & pepper . Add the cooked sweet potatoes , and egg and tomatoes !  Garnish  & enjoy!!!

This week I went to trader Joes specifically to buy some frozen meals! We are busy in the summer and dinner time has become a little stressful . We always get home from the beach right around 530 and every one is STARVING!!! Unless I have something planned dinner gets rushed or we snack too hard and don’t eat our dinner ! So I bought some frozen meals hoping it would help out. Below I shared my Traders Joes haul + what I’m cooking with it. I hope you find it helpful. Id love to hear from you and know what your must have items are when you shop there?

  • Fried rice with chicken and egg. This is a go to in our house! I love their bag of fried rice , it’s a must if you shop at TJ. I always add chicken to mine and sometimes we add a fried egg or two.

  • Lemon chicken  with cauliflower stir fry. This lemon chicken is not our fav. Its way to lemony for me. I normally don’t buy it but they were all out of my favorite grilled chicken. It wasn’t that good int he stir fry . The stir fry alone was pretty good, not as good as the fried rice though!! 
 
  • Cauliflower power bowls. I used the frozen riced cauliflower to make some protein bowls. I added chicken, sweet potatoes , avocado and tomatoes . The frozen “rice” is super easy to make! 
 
  • Sweet pot toast . I have been making this almost daily! It is so good and easy to make . Try some of my fav recipes    
  •  Chicken burger ( they are frozen patties )  with  corn, avocado & tomato salad
 
  • Pork tacos with the frozen cauliflower rice and salsa
 
  • Farro bowls with avocado and a hard-boiled  egg. This was so easy to make and so filling! Definitely buying the faro again

When I grab my snacks to go I always try and grab a protein , carb and fat! Don’t just eat your fruit bags without a protein or fat, you will be hungry!

  • Portioned out fruit- today I made raspberry, grapes &  blueberries bags
  • Veggie bags – My go to bags are carrots and peppers with guac or hummus
  • String cheese
  • Yogurt – I buy plain and add my own fruit to cut down on sugar
  • I also keeps lots of fresh fruit to grab on the go
  • Hard boiled eggs
  • Frozen berry bites 
  • Ready to make smoothie bags . Add fruit and spinach to bags- dump in blender when ready

Snack draw:

  • Portioned out pretzels bags with peanut butter

  • Portioned out granola bags. I like to buy a simple granola mixes and add in some dried fruit and chocolate chips
