Having breakfast ready on busy mornings is a must especially this time of year for a  lot of moms who are trying to get their kids off to school. It’s so easy to skip breakfast or grab something unhealthy on the go. Instead save time, money & your health by planning a head!  Below are my favorite make ahead breakfast ideas with links to the recipes! Meal prep is not always fun but it definitely makes life easier and I highly recommend giving it a try

I make these and use all different veggies depending on what  I have in the fridge

This is another recipe that I mix up constantly. Pick your fav liquid of choice (  milk, almond milk, cashew milk, water ) and mix with oats. When ready to heat you can heat up or eat cold. Top with your favorite fruits, nut butters, chocolate, protein powders  ect!

I make these or regular pancakes and freeze them. I like to use kodiak cakes mix , the chocolate is my go to!

  • Egg Sandwiches

These are easy to make , I make mine with eggs, bacon & cheese on an english muffin. Once cooled I wrap in tin foil. I defrost then heat in microwave.

We like the recipe from above or I switch the ham for prosciutto

  • Chia seed pudding

Soak seeds overnight with your favorite nut milk . I like to add collagen to mine for some extra protein & nutrients , but the chia seeds alone are packed with protein. When I’m ready to eat I top with fresh fruit.

When scrolling pinterest I always click on a recipe that says quick , easy or kid friendly, any one else?! By the time dinner comes around I need life to be simple and these four kid friendly one pot dinners are a life saver. I have even made these house before during nap time and then re heated them for dinner and they still taste great.

For the fried rice dinner feel free to make your when fried rice, we LOVE the frozen one from trader joes and tend to use that instead of making my own. I also sometimes use a bag of mixed frozen veggies when in a pinch for the chicken sausage dinner. I think fresh or frozen veggies this meal still taste great.

Insta pot Bacon & Turkey Meatball Pasta 

Four Kid Friendly One Pot Dinners

  • bacon
  • frozen meatballs
  • tomatoes
  • sauce
  • pasta – we used a veggie pasta
  • fresh basil
  • parm cheese

Add your frozen meatballs to the insta pot. Next add your pasta, bacon , cherry tomatoes, sauce & basil.  Add 3-4 cups of water . Season with salt & pepper . Set insta pot for 10 min high pressure. When its done do a quick release . Add parm cheese , mix and enjoy!

Chicken fried rice 

  • chicken
  • Trader Joes fried rice & veggie mix
  • egg

Cook chicken in your favorite oil, we use olive or coconut. I tend to season with just salt & pepper but feel free to season your chicken however you like. Once chicken is cooked remove from pan and shred. Next add the frozen fried rice and an egg, mix well. Add your chicken back in and cook till rice is done.

Chicken Sausage & veggies 

  • chicken sausage
  • peppers
  • zucchini
  • sweet potato
  • tomato

Add everything to a pan , season with salt and pepper . Cook till chicken is done and veggies have s

Chicken noodle soup ( insta pot)

  • chicken
  • 4-6 cups chicken broth
  • carrots
  • celery
  • onion
  • noodles

Cook chicken in insta pot . Follow directions for your pot. I usually do about 10 minutes depending on chicken thickness. Once cooked shred or cub.

Next add everything else to the pot . Cover and set to seal. Pressure cook for 4 minutes and then use the quick release to vent . Mix and serve!

This week I went to trader Joes specifically to buy some frozen meals! We are busy in the summer and dinner time has become a little stressful . We always get home from the beach right around 530 and every one is STARVING!!! Unless I have something planned dinner gets rushed or we snack too hard and don’t eat our dinner ! So I bought some frozen meals hoping it would help out. Below I shared my Traders Joes haul + what I’m cooking with it. I hope you find it helpful. Id love to hear from you and know what your must have items are when you shop there?

  • Fried rice with chicken and egg. This is a go to in our house! I love their bag of fried rice , it’s a must if you shop at TJ. I always add chicken to mine and sometimes we add a fried egg or two.

  • Lemon chicken  with cauliflower stir fry. This lemon chicken is not our fav. Its way to lemony for me. I normally don’t buy it but they were all out of my favorite grilled chicken. It wasn’t that good int he stir fry . The stir fry alone was pretty good, not as good as the fried rice though!! 
 
  • Cauliflower power bowls. I used the frozen riced cauliflower to make some protein bowls. I added chicken, sweet potatoes , avocado and tomatoes . The frozen “rice” is super easy to make! 
 
  • Sweet pot toast . I have been making this almost daily! It is so good and easy to make . Try some of my fav recipes    
  •  Chicken burger ( they are frozen patties )  with  corn, avocado & tomato salad
 
  • Pork tacos with the frozen cauliflower rice and salsa
 
  • Farro bowls with avocado and a hard-boiled  egg. This was so easy to make and so filling! Definitely buying the faro again

Frozen Berry Yogurt Bites

This has to be the simplest summer snack I have ever made! These frozen berry yogurt bites are perfect snack for picky kids. The best part is you can mix them up by using different fruits and different flavored yogurt. Dairy issue? Use almond milk yogurt!! Id love to know what flavors and fruits you use! What you need :

  • fruit
  • yogurt – I used vanilla greek yogurt
  • a bowl
  • a pan
  • parchment paper

How to make:

Line a pan or plate with parchment paper . I added some yogurt to a bowl but you can use a toothpick to dip your fruit. Then I added a few pieces at a time to the yogurt bowl. Using a fork I transferred the blueberries and raspberries to the pan and stuck it in the freezer.

Freeze for about 30 minute then store in a freezer bag!

Who else loves granola and frozen yogurt?! I found an awesome recipe online and I had to try them! I changed my berry frozen yogurt squares a bit from the recipe I found. I hope you try mine ( or the original recipe ) Please let me know how you like them! Bonus , Brody loves them too!

I found this recipe HERE but I did change a few things!

Berry Frozen Yogurt Squares

  • 1 cups Greek yogurt
  • 1/4 cup milk – maybe a little less
  • 1-2 Tablespoons honey

For the jam

  • 1 cups mixed berries (I used a frozen mix of strawberries, blueberries & raspberries )
  • 2-3 tbs honey

For the granola

I made mine nut free because I knew Brody was going to eat it and I didn’t want him chocking on nuts – feel free to add nuts!

  • 2 cups old-fashioned rolled oats
  • 3 Tablespoons coconut oil, melted
  • 3 Tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Granola instructions : 

Preheat oven to 350 degrees. In a bowl, mix together the oats and cinnamon , I didn’t measure my cinnamon and I added a lot!! Next stir in the oil, honey, and vanilla extract and mix till it is well combined. Spread the mixture out onto a baking sheet, I lined mine with parchment paper for easy clean up. Bake for 10 minutes, then stir/mix up granola.  Bake for another 10 minutes or until granola is golden brown ( watch carefully ) . I then mixed it up and left it to cool on the pan.

Make your jam:

Combine the berries and the honey in a sauce pan and bring to a boil. Then reduce the heat to a simmer,  cook for 8-10 minutes, or until it thickens and is jam-like. Cool to room temperature

I have silicone ice-cube trays that I used. Mine are pretty big and I made 6 of them with this recipe. Whisk together the greek yogurt, milk, and honey .You want it to be pourable but not too runny/watery. Next  gently fold in the jam so a swirl remains throughout the yogurt. Add a couple of pieces of granola to the bottom of each square.  Then spoon the yogurt mixture on top, filling each  square. Add a little more granola on top. Cover with Saran wrap and freeze for at least three hours or overnight. 

I like to take them out about 5-10 minutes before we eat them!

I am obsessed with nourish bowls right now! They are basically a salad with a carb/grain, nuts & seeds and a healthy fat. Although this one does not have a carb/grain I do sometimes add rice or sweet potato.

This Turkey Avocado Nourish Bowl was perfect , especially if you love arugula like me!

Turkey Avocado Nourish Bowl

 

Ingredients

1 large tomato, chopped

1 small red onion, sliced thin

Frozen turkey balls ( or make your own! )

1  avocado

1/2 cup corn  * optional

Olive oil cooking spray

3 cups arugula (or baby spinach)

1/4 cup sunflower seeds

lemon juice + olive oil

Steps

Chop tomato; slice onion ( I used less than half )

Cook your meat balls and your corn according to package

Cut avocados into chunks. Place all ingredients (except dressing) in a bowl. I added lemon juice and a TBS of oil to mine.

This made enough for me to have two servings plus some left over for tomorrow 🙂

Dessert : 

Frozen raspberries with whipped cream.
