Having breakfast ready on busy mornings is a must especially this time of year for a  lot of moms who are trying to get their kids off to school. It’s so easy to skip breakfast or grab something unhealthy on the go. Instead save time, money & your health by planning a head!  Below are my favorite make ahead breakfast ideas with links to the recipes! Meal prep is not always fun but it definitely makes life easier and I highly recommend giving it a try

I try to have a protein, fat and carb with most of my meals . The recipes below are packed with protein to help fuel your busy mornings. Id love to hear from you, what is your go to breakfast on busy days??

I make these and use all different veggies depending on what  I have in the fridge

This is another recipe that I mix up constantly. Pick your fav liquid of choice (  milk, almond milk, cashew milk, water ) and mix with oats. When ready to heat you can heat up or eat cold. Top with your favorite fruits, nut butters, chocolate, protein powders  ect!

I make these or regular pancakes and freeze them. I like to use kodiak cakes mix , the chocolate is my go to!

  • Egg Sandwiches

These are easy to make , I make mine with eggs, bacon & cheese on an english muffin. Once cooled I wrap in tin foil. I defrost then heat in microwave.

We like the recipe from above or I switch the ham for prosciutto

  • Chia seed pudding

Soak seeds overnight with your favorite nut milk . I like to add collagen to mine for some extra protein & nutrients , but the chia seeds alone are packed with protein. When I’m ready to eat I top with fresh fruit.

Protein bowls are one of my favorite things to make. I eat them for breakfast, lunch or post workout. This frozen protein bowl is definitely my go to recipe but I do switch up the fruits and add nut butters for time to time!

Frozen Protein Bowl

Ingredients : 

  • Frozen fruit.  for this bowl I used banana & raspberries
  •  1/2 a cup of nut milk of choice.  I like to use almond or cashew milk . You don’t want to use too much liquid or your bowl will be too watery
  • Protein powder. I use one scoop and usually use  chocolate but any flavor will work.
  • Optional* acia powder, coaco powder  ect


  • dark chocolate chips
  • frozen raspberries
  • coconut
  • oats

Add all ingredients ( not the toppings ) to a blender . Blend until smooth. Don’t over blend or it will become too watery. If you need to, chill in the fridge a but to make the consistency thicker.

When I was pregnant with Brody I had big plans to make some freezer meals for after but I never got around to it! Now that I have my insta pot meal prep is so EASY that I had no excuses this time around. Below are the meals & recipes  that I have made , most are pretty healthy and will serve me, my husband and Brody.

I have been making double batches of the meals below, one for us to eat now and one to freeze so I feel like I am a meal prep queen!

Before Baby Freezer Meals & Recipes 

I made this in my insta pot. I followed the directions for the meat balls but made some changes for the rest. I plan to reheat on the stove tope so I will be adding 2 cups chicken broth, zucchini, carrots and pasta  on the day we eat this!  Everything else got frozen.

There are tons of recipes out there for pie. Mine is my mother in laws recipe . I made the pie but did not bake it. I will bake from frozen the day we eat it.

these are mainly for Brody but will be great if we are in a pinch or to add to a meal/salad for lunch

I did a double batch of this because we love taco soup!! On the day we eat this  I will add avocado and some more cheese .

More pre baby tips :

I also frozen some plain shredded chicken , I plan to make buffalo chicken zucchini boats with it but it can be used for other recipes .

Everytime I make kodiak pancakes I make a double batch and freeze them for post baby. Just heat up from frozen in the microwave. These will be perfect for me or Brody for a quick breakfast.

You might have seen articles everywhere recently about gut health. Have you been wondering what the fuss about gut health is ? Our gut is responsible for keeping our bodies working properly . Around 70% of our immune system is in our gut! I bet you now want to keep your gut/ digestive system happy , right?!

Signs of an unhealthy gut are:

  • bloating , constipation , diarrhea
  • abdominal cramps
  • stomach just never feels “right” 
  • constant heartburn
  • skin break outs
  • sleeping problems
  • an autoimmune condition 

Ways to keep your gut happy:

Avoid processed foods. Processed foods can leave our GI tracks inflamed . Sometimes are bodies don’t recognize the $hit in processed foods as food ( gross ) and instead it thinks it’s an outside attacker.  So our body reacts and by trying to fight off these attackers ( processed foods ) and the result is an inflamed GI tract which can cause stomach pains.

Make sure you go number 2 . Being regular is so important. A healthy gut usually has a pattern ( do you go the same time everyday?? ) If you are not going regularly make sure to check your diet and eat a healthy balanced diet with lots of fruits, veggies, fiber and water.

Add in some fermented food. Have you seen kombocha at your local store? Live cultures found in fermented foods help break down food in your stomach plus help your immune system.  Kefir is another way to add healthy live cultures into your diet. Kefir if found in most grocery stores by the yogurt.

Chew your food better! Eating more slowly and chewing our foods more can help keep your gut happy.

Take a probiotic. If you hate yogurt or other foods containing live cultures it might be time to look into a probiotic

Lower your stress level. Stress has been linked to an unhappy gut. Try some meditation, yoga , diffuse some oils or talk a calming bath. Add into your daily routine  anything to help you relax and de-stress.

Add foods that are good for your gut into your diet.  Look for fiber rich foods and again foods that contain  prebiotics & probiotics.  Foods to add in are yogurts, kefir, legumes, blackberries, raspberries, kimchi & kombacha

Foods to avoid. Avoid carbonated drinks, the bubbles can lead to gas build up in your belly. Too much alcohol and caffeine  can also irritate your gut. Refined sugar, processed foods, sugar-free candies/foods with artificial flavor  and fried foods should all be avoided if you want a happy gut ( and you should want one! )

I have summer & grilling on my mind! If you are anything like me and love mangos then you will love this kabob recipe. I have been totally obsessed with mangos recently and have been searching recipes to try. I found this one at and I didn’t really change a thing ( normally I change recipes ) We paired this with brown rice and Brody ( who is one ) love it!


  • ¼ cup fresh lime juice
  • 1 Tbsp . olive oil
  • 3 cloves garlic , finely chopped
  • 2 tsp . chili powder
  • ½ tsp . sea salt – I use pink Himalayan 
  • ¼ tsp . cayenne pepper
  • 1 lb . raw chicken breast , boneless, skinless, cut into 1-inch cubes
  • 2 tsp . raw honey
  • 2 medium mangos , peeled, cut into 1-inch cubes
  • 1 medium yellow bell pepper , cut into 1-inch cubes
  • 1 medium orange bell pepper , cut into 1-inch cubes
  • 2 medium red onions (or sweet onion), cut into 1-inch cubes

First you will make the marinade  by combining the  lime juice, oil, garlic, chili powder, salt, and cayenne pepper in a small bowl; whisk to blend. Set aside.

Add your chicken to a dish and  pour half of the marinade over the top; toss gently to coat. Cover and refrigerate for 20 minutes to 4 hours.

Next you will stir honey into remaining marinade. Set aside.

Time to make the kabob’s. Place a piece of chicken, mango, bell pepper, and onion  onto a skewer. Repeat twice, so the skewer has three pieces of each ingredient. Repeat with seven remaining skewers. Discard marinade that contained chicken.

Brush skewers with reserved honey marinade mixture. Grill or broil skewers for 6 to 8 minutes, turning every 2 minutes and brushing with honey marinade, or until mango is softened and chicken is no longer pink in the middle.

Brody’s Dinner 

Most nights Brody eats something very similar to us . On the nights we have soup I make him something different only because he hasn’t quite figured out how to use a spoon.

I don’t buy him food that I wouldn’t eat ,  like lots of those kid specific chicken nuggets and gross microwave pizzas!!! ( I mean ellios taste so good but I don’t buy it!!!) I do buy the frozen chicken fingers from Trader Joes ( we love those! ) and frozen sweat potato fries. I believe TJ has some dino nuggets that aren’t terrible we just haven’t tried them yet!

Shaws sells these broccoli / cheese tots that Brody loves .  He would eat the whole bag if he could. I try to give him veggies every night, he gets a lot of our left overs. Anything roasted he loves . He ate all of this and then threw his plate at me!
